Tasty Tuesday - Peppermint Hot Chocolate

With it getting a little chilly out (and in Florida that means that today was a little windy!) it reminds me of peppermint hot chocolate. I used to make that all of the time in college.) I want to share with you my super secret recipe!

Peppermint Hot Chocolate Recipe


Ingredients
  • 1 packet of hot chocolate mix
  • 4 ounces of water
  • 4 ounces of milk
  • peppermint extract
  • whipped cream (if that's what you fancy)
  • crushed up peppermint candy canes 


Directions
  1. Microwave or warm over stove water and milk mixture
  2. Once boiling, pour in hot coco mixture
  3. Add two squirts of peppermint extract (add more if you'd like a stronger taste)
  4. Put a dollop of whipped cream on top
  5. Sprinkle some crushed up peppermint candy canes on top!
  6. ENJOY! :)

Cold Weather, Please.

Seriously though...I do. Haha. ;) I just love the winter season. It makes me feel so warm and cozy.

It's still hot here in Florida - but it's getting better. Tonight it was pretty chilly - it's sixty four right now. To you folks up north, you're probably thinking that's "warm."

I was looking up some flights to Toronto just for fun. (As you can tell after reading my last couple of posts...I want to travel...bad!) And by fun, I mean snow. And cute clothes. ;)

I hope you all are having a fabulous weekend! I sure am! After work today, I did some shopping with a friend for some "girly" things for the house. (Got a new comforter, sheets, bath rugs, and shower curtain!) Then went to go see my little cousin sing at a restaurant. She's only 14 and is so talented - so proud of her. Then V and I did a horrible thing...I ate this...
Totally not in my diet. OH WELL! :)

Ah. So. Good.

I know it's not right, but I feel like it's okay to eat bad when you're PMSing. It is...right? ;)

I'll write more about my weekend tomorrow!

Have I told you how whole I feel with having V home? It's incredible! :)

OH and if you can - I think that the next time you go out to eat, tip your waiter/waitress very nicely. I try to do that as often as I can...but I mean, just do more than usual. If your bill is only ten bucks, leave twenty. Just because you can. Don't forget to bless others for He will bless you mightily for your obedience!

His Word Friday

Within the past couple of weeks, I have been tested quite a bit. As you have probably noticed, I didn't do too much (if any!) complaining. I must say, I am quite proud of myself. There have been so many different occasions lately that I have wanted to rant but I held it in.

There have been a handful of Bible verses that have helped to keep me sane...



Do not let any unwholesome talk come out of your mouths, but only what is helpful for building others up according to their needs, that it may benefit those who listen. 
(Ephesians 4:29)


and

Do not answer a fool according to his folly, or 
you will be like him yourself. (Proverbs 26:4)


 
Lord, I pray that you help me to be quick to think like You, slow to speak, and slow to react. I pray for the mind of Christ today and every day. I pray that you are with me and remind me of your Word when I encounter a situation that my flesh wants to take over and act in a foolish way.

Even if you're reading this blog and you might not believe how I believe...you can think of it in a perspective that - if someone heard you saying something unwholesome about a situation you're dealing with, would you rather them hear you speak about it in a wholesome way or a way that makes you seem just as bad as them?
Trust me, I know how hard it is to not overreact and not say everything you are thinking...but I have accepted that playing the part of the "bigger person" takes work. It even helps the party you are dealing with take a minute and realize how foolish they are acting.

Fond Memories

I feel like that as of late, I've said I have some sort of crazy idea pretty frequently. Remember when I posted about some wild thoughts I had of traveling and free lancing?

I really would love to still do that - I just might wait until it's nicer weather - nothing but sunny skies and crisp air!

And if you guys remember, for at least the next six months, I'll be living beach side! I'm so excited! Only 7 more days until I can move in! I can't wait to show you photos!

For those of you who might have missed it - this will be my front yard for the next six months...

God is so good, isn't He? All of the time! I am so thankful for all He has blessed me with!

The beautiful weather has made me feel nostalgic lately, too. This weather makes me have so many memories of college life, friends...so many fond memories. Especially when it gets cooler outside, it reminds me of living abroad in Scotland. I miss it so much!

Would you believe that the beaches there are pretty nice, too? I wouldn't mind spending my holidays on the beach there - not one bit! It does get a little chilly, of course. But nothing some hot coco can't cure! Finding sea glass near St. Andrews was always so fun, too.

I found some pretty neat sea glass in that beach right there!

My crazy idea would be to go back and visit...perhaps travel back there...make some jewelry from any sea glass I find. Would be so amazing and special.

Anywho...I am so excited to make many more fond memories this winter!

Tomorrow it's supposed to get cooler outside due to a rain storm...woohoo, time to pull out some scarves and boots here in Florida...at least for a couple of days!

Such a Chicken...

I want to update my iPhone to the iOs 5 so badly.

One problem - I'm such a chicken.

I backed up my iPhone but I keep getting this:


Although mine doesn't say anything about taking an hour or so. Nope. I don't even get that.

I don't want to start from scratch...not one bit. No thanks!

Tasty Tuesday - Pineapple Chicken

Pineapple Chicken Recipe



Ingredients
  • 5 skinless, boneless chicken breast halves
  • 1 1/2 (1 ounce) packages dry onion soup mix
  • 2 cups water
  • 1 (15 ounce) can pineapple, drained
  • Chopped fresh red peppers (to your liking)
  • 1 large orange, sliced in rounds
  • 1 tablespoon vegetable oil


Directions 
  1. Spray large frying pan or electric skillet with vegetable spray. Brown chicken breasts in pan, meat side down.
  2. Turn chicken over; add pineapple chunks, onion soup, and water.
  3. Cover, and reduce heat to low. Simmer for 30 minutes. Garnish with cooked pineapple chunks, cooked red peppers, and fresh orange slices.
  4. Serve over rice.
  5. Enjoy!

What a weekend!

I had such an incredible weekend. I can't lie and say that's something unusual - I always have a fantastic weekend...God is good! But this weekend was full of friends I haven't seen in quite some time who all have a special place in my heart.

Can you tell...my new hair color? I'm not sure if it's good enough lighting to tell.
I'm so excited, lovelies! So many fun, exciting things for me this weekend! I have an update on my weekend list: lunch with a good college friend, painting pottery with my mom tonight, work tomorrow but then Jacksonville for dinner with a good friend, and then Caring Chefs on Sunday with another good college friend (good college friend #1 and #2 were roomies at some point!) I can't wait! And then - I get to pick up V from the airport on Tuesday. So happy!

You guys remember baby Alexis? The 1st birthday party I went to last week...she started walking!! Sadly, when I went to hang out with her parents, she was sleeping. But I'm so exciting that she's walking.

Surround yourself with positive people and positive events. It will in turn make you VERY positive. Lately, I've been losing some of my "positive energy" that has been eaten up by many negative people, who are going through a lot in their lives. I'm not saying to say senora to these negative nancies...you just have make a point to surround yourself with positivity - or else you'll be sucked in!
