Tasty Tuesday - Crock Pot Santa Fe Chicken


I hope you guys aren't getting tired of all my crock pot recipes...if you are, let me know and I'll start changing it up!





Crockpot Santa Fe Chicken

Ingredients:
  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • salt and pepper to taste

Directions:
1.) Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.
2.) Season chicken breast with salt & pepper.
3.) Lay seasoned chicken breast on top of mixture in crock pot.
4.) Cook on low for ten hours or high for six hours.
5.) Before serving the chicken...about a half an hour before you're ready to eat, remove the chicken & shred. Put the chicken back in the crock pot and stir.
6.) Serve over rice or in a wrap.

  3. Cami, That looks AMAZING!!!!! I love crock pot dishes there easy to make and yet you can leave it and go to work or school and come home to a meal already to be eaten. I survive on these dishes..
